Experience: Fleming’s Steakhouse - Naples, FL
🍽️ We had another fantastic dinner at Fleming’s Steakhouse in Naples, Florida the other night. We ordered some of our old favorites: filet mignon, Brussels sprouts & bacon, the cheesy Fleming’s potatoes, plus a new addition: the chipotle mac & cheese, which was so creamy and smoky you could’ve sworn the cheese sauce had bacon in it (it did not).
🍷 And the wine: 2021 Schrader Cellars Double Diamond. We knew it was a little crazy, we knew it was young - but who cares! The vote was unanimous and that’s the wine we brought. According to Schrader Cellars, “[the] 2021 Cabernet Sauvignon stands to outshine the award-winning 2019 vintage with even deeper concentration and complexity” (the 2019 won first place in Wine Spectator’s Top 100 wines of the year). And boy, can you tell: even while young, you can feel the complexity, the heft, the flavors that are already beginning to merge. Drinking it now felt like pulling back a curtain to see a masterpiece being rehearsed. Our favorite pairing was the wine with the mac & cheese, whose umami and fatty flavors complemented the wine perfectly.
⏰ All of us at the table have bottles of the 2021 at home. Will we be able to wait a couple years to see how these bottles evolve? Only time will tell 😏
